Parmesan Crusted Chicken 

Ingredients:

3-4 boneless skinless chicken breasts

2-3 lightly beaten eggs (or egg beaters)
1 cup all-purpose flour
1-2 cups Panko bread crumbs (unseasoned)
½ cup grated fresh Parmesan cheese
¼ teaspoon salt
¼ teaspoon pepper 

Directions:

Preheat oven to 375F

Wash and dry boneless skinless chicken breasts and pat dry.

In one shallow bowl, lightly beat eggs. In another bowl add flour with salt and pepper, mix together.

In a third bowl, add panko bread crumbs and parmesan cheese, mix together well.

Dip each chicken breast in flour with salt and pepper, shake off any extra flour. Dip chicken in the egg mixture and coat evenly. Let excess egg drain off into bowl. Place chicken breast in panko bread crumbs mixed with parmesan cheese.

Place each coated chicken breast into a shallow baking dish lightly coated with cooking spray. Bake at 375 F for 35 to 45 minutes. Bake until chicken is golden and no longer pink in center.
