Most of the time you see Cornflake Chicken BAKED not fried.. this recipe can be done in the oven if you wish to save on the grease.. just do recipe the same only after dredging you arrange the strips in a greased cookie sheet or 13x9x2 pan.. and drizzle with melted butter baking uncovered at 350 for 1 hour.  BUT I tell you.. fried is always better.. LOL.. better crunch.. more moist of course too so here ya go..


PAN FRIED CORNFLAKE CHICKEN STRIPS

2 eggs slightly beaten

1/4 cup milk

2 1/2 cups crushed but not pulverized cornflakes

salt

pepper

1 Tbsp self rising flour

1 tsp of Old Bay Seasoning

tsp  garlic powder

Boneless Skinless Chicken Strips

Directions:

Mix together eggs and milk in a dish.

Crush but do not pulverize your cornflakes

Mix cornflake crumbs , flour and seasonings all together

put chicken strip pieces in egg mixture.

heat oil in large skillet..

Note Veg oil does well doesn’t burn as easily but Extra Virgin Olive Oil is way better for you so your choice but be careful not to burn the oil, if getting to hot turn down heat.

dredge in crumbs to coat evenly

Place your chicken in pan and fry till done on both sides and all the way through..

serve with Oven Roasted Potatoes  BBQ Sauce, Honey Mustard Sauce and Or Ketchup =) YUM Serve IMMEDIATELY !!
