Oven Baked Blueberry Pie
  • Pastry for a 2-crust pie
  • 1/4 cup white sugar
  • 3 tablespoons quick-cooking tapioca
  • dash of cinnamon
  • 4 cups bluberries
  • 1 tablespoon freshly squeezed lemon juice
  • 1 teaspoon grated lemon rind
  • 1 tablespoon butter

1.Preheat the oven to 425°F (218°C).

2.Line a 9-inch (22.5 cm) pie plate with half of  pastry.

3.In a mixing bowl,combine the sugar,tapioca and cinnamon.

4.Mix well and sprinkle mixture over the berries.

5.Add lemon juice and rind.

6.Pour berry mixture into the prepared pie plate and dot with butter.

7.Cut the remaining pastry into strips and make a lattice top for the pie.

8.Trim edges,moisten,and border with a strip of pastry.

9.Place on low rack of preheated oven and bake for 50 minutes.

10.Serve oven baked blueberry pie warm or cool.
