Mrs. Evelyn’s OATMEAL BREAD 

Recipe from Evelyn Oldham from Mt. Victory

2 1/2 cups boiling water

2 cups oatmeal

1 cup honey or part Karo

2 tsp salt

3/4 cup veg oil

4 eggs beaten

2 pkg yeast

2 cups or more whole wheat flour

 

dissolve heat in 1 cup warm water.

Pour boiling water over oatmeal and set aside to cool to lukewarm.

Now eat all the above ingredients well together, being sure everything is just warm before adding yeast.

Work in enough white flour (preferably unbleached) to make a nice spongy dough the is not sticky. Grease top and let rise twice after kneading it. Handle as other bread.

bake at 400 degrees for 10 minutes. Turn back to 350 degrees for 25-30 minutes. Depending on the size of loaves.
