1/4 cup veg oil

1 cup self rising corn meal, more for the skillet

1 cup self rising flour

1 cup whole milk

1 large egg 

Preheat oven to 400 pour oil into a black iron skillet and place the skillet in the oven to get hot.

In a large bowl combine the cornmeal and flour. Add milk and egg and mix well. Remove the hot skillet from oven and pour the hot oil into the batter. Stir just until the oil is combined. Sprinkle in a small amount of dry cornbread into the bottom of the skillet, pour the patter in and return the skillet to the oven. Bake until lightly browned on top and immediately turn out onto a plate to cool.
