4 medium sweet potatoes (2 lbs) or canned sweet potatoes

1/4 cup packed brown sugar

1/4 cup margarine

1/2 teaspoon salt

1 tablespoon packed brown sugar

1 tablespoon water

1 tablespoon margarine

1/2 teaspoon cinnamon

1/4 teaspoon ground nutmeg

1 1/2 cups mini marshmellows

1/4 cup chopped pecans

Prick each potato, arrange in microwave and cook on high for 8 to 10 minutes, cover & let stand 5 minutes. Peel & slice potatoes, place in 2 quart casserole dish. If using canned sweet potatoes just heat in microwave for 2-3 minutes then add 1/4 cup brown sugar, 1/4 cup margarine, & salt, mash until no lumps. Microwave on high for 2 minutes, stir & set aside. In a small bowl mix 1 tablespoon brown sugar, 1 tablespoon margarine, 1 tablespoon water, cinnamon, nutmeg & microwave on high for 1-2 minutes until margarine melts, stir after 1/2 of the time. Add marshmellows, toss to coat, top sweet potatoes with marshmellows and microwave on high for 2-4 minutes or until melted. Sprinkle with pecans. Enjoy!
