Ingredients

Carrots, raw, 1 cup, chopped
Onions, raw, 1 cup, choppeCauliflower, raw, 1 cup
Celery, raw, 1 cup, diced
Cauliflower, raw, 1 cup, chopped
Egg, fresh, 1 large )
Salsa mild 8 fl oz,(1- 12 oz jar)
Cornmeal Muffin Mix, 12 oz ( 1box)
Ground beef, lean, 16 oz
Directions

Preheat oven to 350
Spray baking tins with canola oil cooking spray
Chop vegtables and put in bowl ,
add egg, mix
and add salsa , mix
and add ground beef.
mix with utensil or hands,
divide evenly into 2 large muffin tins. ( 6 muffin cups each),
Bake at 350 for 50 minutes
Allow to cool and run the edge of butter knife around sides to insure easy removal. Either flip pan over or use knif to get under each mini loaf.
