Manicotti 

Make a pancake batter of

1/2 c sifted flour

2/3 c milk

1 tbsp melted butter

1/2 tsp salt

2 eggs well beaten 

Using small gravy ladle, spoon ladleful of batter into a small hot greased skillet. Tilt skillet around to make pancake as thin as possible. Bake until done on one side only slide onto waxed paper and proceed with next one. Makes about 12 pancakes. 

Filling

1/2 lb ricotta cheese

1 c chopped parsley

1 beaten egg

1/2 tsp salt

1/4 c grated parmesan cheese

Mozarella cheese 

Spread a spoonful of mixture on each pancake roll up and arrange in a baking dish. pour 1 1/2 c spaghetti meat sauce place manicotti on top and pour more sauce with Mozzarella layers . 

Bake at 375 for 30 min or till bubbles let sit 15 min serve with additional sauce and parmesan cheese
