3 Thick slices of Pancetta, diced

1 large onion, chopped chunky or fine..  however you like

4 Potatoes with skin on chunked

pepper

18-24 eggs

Extra Virgin Olive Oil

1/3 cup Cave Age Vermont Cheddar Cheese shredded

 

Put potatoes and pancetta in together over heat with Olive Oil add pepper.. once potatoes are soft and pancetta is cooked, add onions and cook.. take out and drain

Then take FRESH pan and rub with olive oil lightly… have your eggs mixed up in separate bowl.. add all ingredients including cheese, (can add green pepper mushroom, spinach.. whatever you desire chopped tomato)  to pan and cook on stove top just until sides set.. then put into oven at 350 degrees and let bake… watch it and when is almost firmed up, you will broil at 500 until top is browned .. enjoy!!!
