Hey fellow gardeners….
Got about 1/3 of the garden cleaned out today. What do you do with your green tomatoes??? I pickle some, and I have a green tomato cake recipe that is fabulous (previously posted)… but I sure have a LOT of tomatoes!!


  • Sharron Snyder Lauchman my Mom canned them green and then we used later for fried green tomatoes, but don’t remember how she did it.

  • Kathy Morrissey Green Tomato Pie III
    All Recipes
    5 green tomatoes, chopped

    1 1/2 cups white sugar

    2 tablespoons cider vinegar

    1 teaspoon ground cinnamon

    1/2 teaspoon ground nutmeg

    1/4 teaspoon ground cloves

    1/2 teaspoon salt

    1/4 cup all-purpose flour

    1 recipe pastry for a 9 inch double crust pie

    Check All Add to Shopping List

    Directions

    1.Preheat oven to 350 degrees F (175 degrees C).
    2.Place diced green tomatoes and vinegar in a large bowl.
    3.In a medium bowl, mix together sugar, cinnamon, cloves, nutmeg, salt and flour. Sprinkle over tomatoes and toss to coat evenly.
    4.Pour into pie crust and cover with criss-cross lattice crust.
    5.Bake at 350 degrees F (175 degrees C) for 30 to 35 minutes, until bubbly and crust is brown.

  • Judy Sanford Scott Slice them, dip them in cornmeal and put them on a cookie sheet and freeze them. Then bag them up for fried green tomatoes in the winter time
  • Judy Sanford Scott My mother used to dip them in a weak clorox solution, wrap them in newspaper and pack them in a box and have ripe tomatoes at Christmas .
  • Lillian Asbury We picked our green tomatoes today and a small wheelbarrow of green peppers. Frosted last night, but thankfully didn’t get the peppers or tomatoes. Picked our popcorn also. Actually picked a few ears of corn about a week ago. It was planted to harvest late. I am in WV. We lay our green tomatoes out in boxes in single layer and let them ripen.

  • Cherie Antin Fasbinder just came out of the oven… smells great. I made a bunch of very small ones (gifts) and I regular loaf pan for us! As soon as it cools enough to take out of the pan I will post a pic :o)

  • Dawn Parkison I set mine on counter with a few ripened tomatoes and let them turn red then I take the abundance no one ate, chop up and freeze in little baggies to add to soups and other dishes I will cook over winter. I like doing it in small batches instead of in Tupper ware so whatever I thaw I cook immediately. I especially like to make chicken cacciatore (hunters chicken)and recently I used sliced tomatoes from the freezer in a pinch for a pizza Marguerite and it tasted same as if I had freshly sliced the tomatoes from the garden.
