My mother-in-law’s recipe, you won’t find this in a restaurant! 



1 small onion, chopped

winter squash (cut into small cubes)- I usually use butternut

1 medium sized potato, cut into cubes

half can of chick peas

1 tsp coriander

1/4 tsp turmeric

1 tsp ground cumin

1-2 tsp chili powder to taste

salt to taste


Add oil to pan and fry the onion until slightly brown. Remove, then fry potatoes until almost done. Remove, add squash and cook until almost done. Add onions, potatoes, and chickpeas. Add spices, a little water to blend the spices (approximately 1/2 cup) and stir well. Be careful not to over-stir, as the squash may get mushy. Cook until squash and potatoes are done. Add salt to taste.
