Chocolate Raisin Cake by Janie Wilt, my MIL

1lbs. raisins
2c. water

Simmer together until raisins are fat and plump, and let cool and strain and keep water for later use.

1/2c. Shortening
1 cup water (use raisin water)
2 cup sugar
1 tsp. salt
1 tsp ginger
1 tsp. cinnamon
2 tsp. soda
4 cups flour

Mix together in bowl until well mixed, add raisins last or they will sink to bottom of bowl. Pour into greased tube pan. Bake at 350 for 2 hrs.

Chocolate Topping:

3 cups of Confectionery Sugar
4 tbs. Cocoa
Milk just drizzle in to thin your topping out to pourable status.

Mix with mixer and pour onto cooled cake.

I’ve never made it but sampled it several times, great with coffee,
almost best of both worlds, chocolate and coffee, lol
