Green Tomato Pie


4cups green tomatoes, thinly sliced
1cup brown sugar
1/2cup white sugar
4-5 Tbsp. flour
1 teas nutmeg
1teas cinnamon
1/2teas cloves
2Tbsp butter
double deep dish pie crust
Wash tomatoes,remove stems (do not peel).Thinly slice into a large bowl.Cover with “boiling water” & let stand 10 mins, drain
Mix sugars, flour &spices together then sprinkle over drained tomato slices and mix gently by hand,
Layer tomato slices in unbaked pie crust, dot with butter then cover with remaining crust.
Cut vents in top crust, place pie pan on a sheet of foil or cookie sheet to catch spills.
Bake 400 degrees for 40 mins then 375 for 15 to 20 more mins.
more spices can be added … & some recipes pour 2Tbs lemon juice over the tomatoes after they are drained.
