    Jennifer Marranci You can find candied fruit on line. A few years ago I sold about 30 fruit cakes so I ordered it by the gallon which was very economical, 15 dollars a gallon. But it’s very easy to make your own candied fruit and it tastes so much better. The fruit retains it’s flavor and makes a much better cake. I just got an order for one so I’ll be candying fruit tomorrow.

  • Jennifer Marranci There are a lot of recipes but most look harder than it needs to be. Basically I just mixed sugar and water as if making simple syrup. I did approximately equal parts, I’m not much of a measurer, then dropped the fruit in to simmer 20-30 minutes or until its transparent.(separate pots for each fruit) You can use fresh fruit or canned. I like the canned cherries packed in water but I have used maraschino cherries and they were pretty good. I like the store bought candied fruit ok but it all tastes the same. Home made is a little time consuming but worth it to me, the fruits retain their flavors and have a better texture. Pineapple is especially delicious. Your cakes come out so much better you’ll be glad you took the extra time.
