RECIPE AND PHOTO SUBMITTED BY  Tom Jubis

Home made Pancakes
I’ve been making these for my daughter since she was a baby. Whenever she comes to visit now, I will make them for her breakfast.
1.5 C flour
1 tbsp sugar
2 tsp baking powder
1 tsp salt
1 beaten egg
1 tbsp veg. oil
11/4 C milk
Sift together dry ingredients
Beat egg with 1 tbsp. oil then add milk and stir into the flour mix.
Stir until combined but leave slightly lumpy.
Cook in hot griddle or pan turning once or twice.
It’s a simple recipe from an old 1950 Purity cookbook, but still one of our favorites.

Looks very much like a recipe I use. Suggestion: Try brown sugar to replace the reg. sugar in the recipe. Gives them a slightly different flavor, my grandies love it.
