HEALTHY YUCCA FRIES

Use a very good peeler or sharp knife to cut off the waxed exterior & ends of the root.

After skinning, cut out pith in center of root. Then halve, quarter, eighth & sixteenth lengthwise. If rather long, first cut in half.
Into boiling water for nearly 2 hours. Add water as needed
To prevent water boiling over, use a large wooden spoon like this.
Olive Oil drizzled on Yucca cooked at 425° until brown sprinkled with Salt, Pepper, & any other flavors you like. (added Garlic Powder & Epazote on these)
