I made ground beef empanadas for dinner. They look a little bit messy, but they are delicious.
Empanadas with ground beef

– 1 pound ground beef
– onion
– 8 teaspoon chili
– big can tomato sauce (32 ounce)
– 2 cans (4oz) chopped green chilies (drained)
– 2 teaspoon sugar
– 1 teaspoon salt
– tortilla flour

— brown meat with onion
— drain meat from grease
— add tomato sauce, green chilies and seasoning
— simmer for 15 minutes

— in bowl 2 cups of tortilla flour and 1/2 cup warm water
–mix good till you get a ball
–divide dough in 16 little balls
–roll out each ball, pour cheddar cheese, then filling and then cheese again, and fold it in to an empanada.

–350F for 15 minutes
— delicious with mexican rice on the side

Mexican Rice

– 2 cups of rice
– 2 tablespoons vegetable oil
– 3 cups chicken broth
– ½ onion
– 1 poblano pepper (or green bell pepper)
– 1 jalapeno
– 1 roma tomato
– 2 cubes chicken bouillon Knorr
– salt, pepper, 1 teaspoon cumin, cilantro, 2 cloves of garlic

Ø cook rice in oil (3min) med heat
Ø add chicken broth >> bring to boil
Ø add al vegetables and seasoning
30 min low heat
