Gooey-Good Rolo Cookies

1 bag semi sweet chocolate chips
4 T butter, 4 eggs, 1 1/3 c sugar
2 t vanilla, 1/2 c all purpose flour
1/2 t baking powder, 40 Rolo’s

Preheat oven 350° Line baking sheets w/parchment paper, set aside, Over a double boiler, melt chocolate chips & butter, combine eggs, sugar & vanilla, whisk till combined, set aside. Next, combine flour & baking powder, set this aside also. When chocolate is melted, slowly add it to the egg & sugar mix, stir vigorously until incorporated. When chocolate & egg mix is combined, stir in flour mix, Fold in the Rolo’s. Drop by heaping T on prepared pans. Bake 10 minutes until centers are just set. Let cool on baking sheet for 5 minutes before transferring to wire rack to finish cooling.
