This is a very old recipe, It is a very moist  gooey rich cake, my mom used to make these years ago… I think it is delicious!!


FRUIT COCKTAIL CAKE

2 eggs, beaten

1 ½ cup white sugar

1 large can fruit cocktail WITH juice
2 cups all purpose flour
2 tsp  baking soda
½ tsp salt
1/2 cup brown sugar
1/2 cup Pecans
Topping
½ c. brown sugar
scatter of   chopped pecans

ICING

½ c. evaporated milk
1 stick margarine
1 c. sugar
1 c. coconut
1 tsp vanilla
Mix your milk, butter, and sugar together.. boil for 2 minutes and add coconut and vanilla.. pour over hot cake..

DIRECTIONS!!!
Mix eggs and sugar, add in your fruit cocktail with juice mix well and in dry ingredients mix well pour into buttered or sprayed 8×13 glass pan.. sprinkle topping over top of batter (I added a sprinkle of cinnamon and sugar as well)  bake at 350 for about 40 minutes or till set.  take out and pour icing over top while warm.. let set up.. do not cut for a while.. it is a very very very moist gooey cake
