Fried Sweet Potato Pies

Pie Dough:
4 ½ c. self rising flour
3 tbs. sugar
½ c. Crisco shortening
2 lg. eggs
1 c. milk

Mix the above ingredients to form dough knead several times and chill in fridge for 3 hrs. Then make 24 balls and roll out into a 5 in circle diameter for pies.

Filling:
3 c. cooked cold mashed potatoes
2 c. sugar
3 lg. eggs beaten
5 oz. can evaporated milk
¼ c. butter melted
3 tbs. all purpose flour
1 tsp vanilla or nutmeg or cinnamon your choice
Oil fro frying
Mix first seven ingredients set aside. Now roll out pie crust and add 2 tbs. of potatoes on. Before folding dough over making a half moon wet the edges of pie dough then fold over. Take a fork and crimp edges. Poke 4 holes with fork on top of pies and then fry in hot oil over medium heat until golden brown on both sides. Optional can sprinkle with powder sugar once cooked and drained on paper towels. Enjoy.
Optional if you don’t want to make pie dough use Grand Dad Flaky Biscuits you will need 3 cans 8 count. Baked pies spray a flat biscuit pan with oil add pies. Spray pies lightly with vegetable oil or brushed on melted butter sprinkle a little sugar over and cook in a preheated 350 deg. Oven until brown.
