RECIPE AND PHOTO SUBMITTED BY Alexandra Lim

I don’t have an exact recipe for this as I cook different amounts all the time. But here’s something I put together, hopefully that will help.

Fried Rice with homemade Chinese BBQ Pork
4 cups cooked rice (I prefer Jasmine as its more flavorful)
1/2 lb. Chinese BBQ pork, diced
1/2
cup shrimps, diced
1/2 cup frozen peas
1/2 cup frozen corn
1 tbsp. chopped garlic
2 tbsp. hoisin sauce
2 tbsp. oyster sauce
3 stalks green onions, sliced
2 eggs
salt & pepper to taste

1. Heat 3-4 tbsp. oil and saute garlic till fragrant but not browned. Add shrimps, cook till slightly pink, add pork, peas and corn. Add sauces and stir fry for a few minutes till well combined. Add rice and stir to coat.
2. Make a well in the center, add 1 tbsp. oil and add eggs, 1 tsp. soy sauce and shake of pepper. Scramble the eggs in the center till slightly cooked, then toss with the rice to mix well.
3. Season with salt and pepper to taste. Garnish with sliced green onions.
