FRENCH ONION SOUP!
1Tablespoon olive oil or canola,
1 Tablespoon butter,
2 lbs sweet onions,
2 leeks,
32 oz beef stock,
32 oz chicken stock,
bay leaf and thyme,
salt to taste,
1/3 cup red wine
1 Tablespoon flour,
1/2 loaf french bread cut into pieces,
1 cup grated cheese [I used some farmers cheese from the amish store]….
melt butter with the oil into a dutch oven or stock pot…
add onions thin sliced cook slow and low to let them carmalize..
scraping often to get the little brown pieces off bottom of pot…
this will take about 30 45 mins to get really browned… add in the stock liquid and spices, red wine, salt and pepper to taste..
add the flour to about a cup of cold water and add in the pot to thicken.. let simmer about 30 mins… put the bread into the oven with some cheese on it to get melted under the broiler…
ladle out soup into oven proof dishes and put bread with the cheese into the soup and add more soup on the top… then top with grated cheese.. I used mottz. cheese on the top cause it was already shredded…. put under the broiler to melt cheese…
I used 2 different cheeses…
I also added some liptons onion soup mix into the soup about half a packet of it to give some more flavor….
and I have homemade bread in my fridge so I used it up today…
but you can use french bread or any other you like…. hope ya’ll enjoy this.. it is simple to make and really good too…. 🙂
