Eggless Chocolate Banana Oatmeal Cookies

Ingredients:

1/2 C oatmeal

1/2 C of flour

1/3 tsp of baking soda

1 medium sized , ripe banana

5 tblsp of dark brown sugar

4 tblsp of sunflower/vegetable oil

1/2 dark/milk chocolate chips

Cocoa powder to taste(I used 1 tbsp.) optional

3 tblsp of milk

 

1. Puree the banana along with the sugar, milk and oil.

2. In a bowl, mix the flour, oats, chocolate chips and baking soda.(also cocoa powder if using)

3. Fold in banana mixture till everything is just moistened.

4. Cover the bowl with a plastic wrap and chill in the refrigerator for 30 mins or more

5. Pre heat the oven at 350 and prepare cookie sheet with parchment paper

6. Place spoonfuls of the mixture into 18-20 mounds, With damp fingers, slightly flatten the tops.

7. Place the tray in the center of the pre heated oven and bake for about 13-14 minutes or till the tops are firm

8. Cool the cookies in the tray for a minute and then transfer to a rack to cool completely before storing in an air tight container.
