Egg White and Peppermint cookies.

preheat oven to 350
beat 12 egg whites until they are stiff, and add 1/4 cup of fine sugar. (not powdered sugar, it doesn’t work as well), and add 1/2 cup of finely crushed candy canes.

remember to fold gently as you add the ingredients. place on a pam coated cookie sheet. turn the oven off, and bake the cookies for 1 hour.
I remember my family fixing these when I was young, and I am going to revive the tradition again this year with my kids. You can add anything to the cookies you like, nuts, raisins, chocolate chips.
