Diabetic Sweet Potato Bread 

2 sweet potatoes, peeled
2 T. low cal margarine
3 T. sugar
1 tsp. nutmeg
1 tsp. allspice
1/4 tsp. salt
5 T. flour
1 c. egg substitute

Preheat oven to *425. Boil sweet potatoes until soft and mash throughly. Stir in margarine. Add all remaining ingredients andmix throughly. Pour into non-stick loaf pan and bake 30 minutes or until knife inserted comes out clean.
