This is my “go to” pie recipe. It also is from Quick Cooking Magazine.

CRUSTLESS PINEAPPLE PIE

2 cups milk
2/3 cup sugar
1/2 cup baking mix
1/4 cup butter, melted
2 eggs
1 1/2 tsp vanilla extract
1 can (20 ounce) crushed pineapple, well drained

In a blender, combine milk, sugar, baking mix, butter, eggs and vanilla until smooth.
Sprinkle pineapple in the bottom of a well greased deep dish 9 inch pie plate. (I use a 10×10 in square glass casserole dish).
Carefully pour the batter over the pineapple.
Bake at 350 for 40-45 minutes or until a knife inserted in the center comes out clean.
Wonderful warm or cold!!
