1 cup yellow corn meal

1 cup unsifted all purpose flour

2 tbsp suar

4 tsp baking powder

1/2 tsp salt

1 cup milk

2 tbsp finely chopped onion

1/4 cup shortening

1 egg

Heat oven to 425 Grease an 8x8x2 inch or 9x9x2 inch pan or grease 12 medium muffin cups

In medium bowl, blend all ingredients about 20 secs.

Beat hard one minute. pour into prepared pan. If using muffin pans fill two thirds full.

Bake corn bread about 20-25 minutes or until golden brown. Bake corn muffins about 15 minutes or till golden.

Makes 1 corn bread or 12 muffins.
