Old Recipe.. Very Good Moist Cake

COCOA APPLE CAKE


3 eggs

2 cups sugar

2 sticks margarine

1/2 cup water

2 1/2 cup all purpose flour

2 Tbsp Cocoa

1 tsp baking soda

1 tsp cinnamon

1 tsp allspice

1 cup finely chopped walnuts (optional)

1/2 cup semi sweet chocolate bits (optional)

1/2 cup raisins

2 cups grated  apples

1 Tbsp Vanilla

Cream together until fluffy the eggs, sugar margarine and water.

Sift together the flour, cocoa, baking soda, cinnamon, and allspice.

Add to creamed mixture and mix well.

Fold in walnuts if using, and choc bits, apples,

then vanilla

Mix until distributed evenly. Spoon into greased and floured 10 inch bottom tube pan.

Shake mixture of cinnamon and sugar on top if desire before baking.

Bake at 325 degrees for 60-70 minutes or until cake tests done

let sit a few minutes then, using hand towels so you wont burn yourself, give firm shake to cake, turn it clockwise and shake again, continue until you go 360 degrees around and cake is loose.. when your sure cake is loose you then put plate on top  of pan before flipping over in one swoop.. remember this cake is not easy to flip, as it is very moist when first done.. if your not comfortable with flipping it yet.. wait a little then try, I like to flip mine while warm cause I like to put glaze on it while warm..

Note: can serve with or without glaze.. if going to glaze…. mix half and half or regular milk with confectionary sugar, a little cinnamon and sugar till thick but runny and pour  some of it over cake.. let sit and harden then pour some more..

Cut and Serve while warm or let sit and let serve after it cools.
