Sorry Serena, I have been away from the group for some time now, Well, I am back to cooking and wanted to share this with you all. These were so yummy, How could I not?  

Chicken Soft Tacos

4 chicken breast cut into cube slices
about 5 sliced spring onions (also known as scallions or shallots)
Add “Creole Seasoning” to cover the chicken and onions, mix well (You made add more to your liking, just remember the more you add the spicier your chicken mix will be)
add enough canola oil to pan to keep chicken from sticking or use cooking spray
use low flame, add chicken breast and onions on low heat simmer until chicken is tender

1 Each Bell Peppers (green, yellow, red and orange)
Slice bell peppers into strips
Remove chicken from pan, and add bell peppers continue to simmer until tender
When bell pepper is tender add more spring onion, kale and return chicken to pan
Let simmer about 10 more minutes, stir on occasion to mix everything together well

Ready to serve on a warm flour tortilla
Top with anything you like, cheese, sour cream, guacamole.. etc!
