CHERRY JAM

5 cups of heavy simple syrup with any juice from cherries added
3quarts cherries pitted and halved
Add to stock pot
High heat
Add splash of lemon juice
Add 2 cups sugar
Add corn syrup or you can use honey
Boil
Add 3 more cups of sugar
Continue to boil and add pectin

I use an emulsifier stick blender to blend some of the cherries but not totally
You want some visible fruit

When the spoon test shows thickness you desire then take off heat

Ladle into hot jars and clean rims

and seal with bands
Do hot water bath 10 min
