BLACKBERRY COBBLER

spray a 9×13 pan with bakers joy-

in measuring bowl add 8 cups of frozen blackberries

pour 1 cup of sugar over blackberries (may need more if blackberries are sour) 

add the blackberries to the bottom of the pan

take about 2 tbsp cornstarch and shake over berries and mix around

Now scoop out one cup of the sugared blackberries and put aside for later

to the top of the berries I add about a half a stick of  butter (sliced up and placed randomly over berries

Now for the batter:

add to mixer
1 stick butter
1 1/2 cups sugar

mix well

and add 1/2 cup heavy whipping cream

add in
1/4 teaspoon baking soda
1 1/2 cups all-purpose flour

slowly add
3 large eggs
1/2 teaspoon vanilla extract

mix well

and pour batter over top of blackberries

then add the leftover cup of blackberries to top,

sprinkle top with sugar

and put into 350 degrees F. oven.

bake 1 hour 10 minutes  or until knife inserted into the center of the cake comes out batter free

eat cold or warm

BEST SERVED WITH VANILLA ICE CREAM and bottom berry juice over top of ice cream..
