*Simply Perfect Clam Chowder* Courtesy of Cooking with Andy


Ingredients
7 or 8 pieces of bacon cut up small
7 medium red potatoes chopped skin on
1 medium sweet onion chopped
3 (6 ounce) cans clams with juice reserved
2 cans condensed cream of celery soup
2 cups Half & Half
1 or 2 teaspoons table salt
1 teaspoon black pepper
1 teaspoon dried dill weed
2 tablespoons butter

Directions
In a medium bowl combine Cream of celery soup and Half & Half, hand whisk until smooth sit aside. Place bacon in a 6 quart Dutch oven and fry on medium heat until crispy add onions and cook covered until translucent. Add clam juice and potatoes. Stir, cover and cook on medium heat 20-25 minutes or until potatoes are fork tender. Add cream mixture, clams, butter, dill weed, salt and pepper. Cook on low heat for 45 minutes covered stirring often.
