LEFTOVER MASHED POTATOES

Leftover Mashed Potato Casserole

 

1 pound cold mashed potatoes

1 pint sour cream

1 1/2 cup grated Cheddar cheese

Directions:


In a medium bowl mix mash potatoes and sour cream. Set aside. Spray a baking dish with non-stick spray. Spread layer of mashed potato-sour cream mixture in casserole then layer of cheddar cheese; repeat. End with topping of remaining grated cheese. Cover and bake for 30 minutes at 350 degrees F.

 

 

Mashed Potato Flat Cakes

3 tablespoons finely chopped onion (optional)

 

1/3 cup butter

4 cups cooked mashed potatoes

2 eggs, beaten

1/2 cup flour

Directions:

Cook onion in pan in about half of the butter until onion is translucent. Remove onion from pan with a slotted spoon, allowing the melted butter and pan drippings to remain in the pan.

 

Combine onion, mashed potatoes and egg. Sprinkle with flour. Add remaining butter to pan and heat to medium/high heat. Add potato pancakes and cook about 5 minutes each side until browned.

 

MASHED POTATO CROQUETTES

 

 

Ingredients:

leftover mashed potatoes

shredded cheddar cheese

egg

bread crumbs

oil

Directions:

 

I don’t have exact measurements, but these are great! Mix leftover mashed potatoes with some shredded cheddar cheese. Flatten into patties. Whisk egg briskly. Dip in egg and then in bread crumbs. Fry on both sides in oil until browned.

 

MASHED POTATO CANDY

 

Ingredients:

1/4 cup mashed potatoes

2 tablespoons milk

1 teaspoon vanilla

1 dash salt

1 pound box powdered sugar

Peanut butter

Directions:

Mix together all ingredients, except peanut butter. Add sugar until dough consistency. Roll out onto powdered sugar dusted bread board or waxed paper. Spread peanut butter all over. Roll it up like a jelly roll loaf.

Place in refrigerator to chill. Slice 1/4-inch thick.

 

 

CHEESEBURGER PIE FROM LEFTOVER MASHED POTATOES

Ingredients:

 

1 1/2 pound ground beef

1/2 bell pepper (chopped)

1/2 onion (chopped)

1 pound cheese (sliced)

left-over mashed potatos

Directions:

Brown the ground beef then stir in the peppers and onions, cook until vegetables are tender, drain. Layer in the bottom of a 9 X 13 pan. Cover this with a layer of mashed potatoes and top with the cheese. Bake at 375 until the cheese is completely melted.
