can make for 2 or more

quick version is

2 to 4 cuts of steak (can be london broil, round steak, kc or new york strip)

1 can diced tomatoes with basil, olive oil

1 can whole black olives (do not drain)

1 roma or small ripe tomato sliced

2 to 4 cloves garlic sliced thinly

1 tsp dried oregano

couple dashes of black pepper

fresh or dried parsley (optional)

1 loaf of crusty bread like french loaf

place the steaks in a 9×13 baking dish and preheat oven to 350. Pour the can of tomatoes and can of balck olives with the juice over the steaks; add the herbs and black pepper. Now place sliced garlic over steaks and finish with fresh sliced tomatoes and sprinkle parsely if you like. Cover with foil and bake about an hour. This dish will produce this delicious beefy juice so serve it with some crusty bread and some rice,risotto, pasta or mashed potatoes. All the men in our family devour this meal (even the ones who don’t like black olives will eat this dish). But for 2 people it can be a romantic dinner that’s pretty on a plate serve with a tossed salad and red wine, preferably Lambrusco and of course the nice crusty bread to soak up the juices.
