FRIED THEN BAKED – CHICKEN CUTLETS

I used thin chicken cutlets and a cast iron skillet

put 3 eggs in one bowl with some texas pete hot sauce.. a good amount mix with fork

in another bowl put a good amount of Italian Seasoned bread Crumbs, and some self rising flour.. no need to measure.. mix it together and add in a tbsp Cajun seasoning, and a tsp of garlic powder, tsp black pepper mix with fork..

put oil in cast iron skillet, and get it hot then turn down heat some (remember cast iron retains heat very well) dip your cutlet into the egg mixture then dredge into the flour mixture.. put two cutlets at a time into a hot 10 inch skillet.. ( I used two skillets to get all my chicken done quicker) brown on both sides nice and crisp then put onto a slotted baking pan.. once all are browned and on the pan .. put into oven at 350 degrees and bake for 20 minutes.. meanwhile make your corn on the cob and mac and cheese and salad… it is a fast easy meal for summer.. kids love it.. chicken cutlets are so tasty and very moist and tender .
