SERENA’S MADE FROM SCRATCH PEAR PIE

 

Filling :

6 pears peeled cored and sliced

3/4 cup sugar

3 tbsp lemon juice

2 tbsp butter

1/2 tsp ground nutmeg

1/2 tsp ground cinnamon

1/4 tsp salt

3 Tbsp cornstarch mixed with a small amount of water in cup.

1 qt of canned pears in heavy syrup

Pie Pastry for 2  pies top and bottoms

DIRECTIONS:

First: you want to prepare your pie pastries for top and bottom of two pies and wrap in waxed paper.. refrigerate 30 minutes

Roll out and line 9 inch pie pan/plates and sprinkle a dab of sugar and cinnamon over top

Peel and slice your pears and make sure you get all the little bits out of the center with a melon baller toss with a tbsp of lemon juice


line pie plates with your sliced pears and sprinkle with cinn and sugar mixture

take  one jar of my home canned pears and drain  syrup off into a saucepan

take the cornstarch, about 3 tbsp and mix with a little bit of water in a cup

Put saucepan on stove and mix in sugar nutmeg  cinnamon butter lemon juice and salt.. put onto heat let come to boil

and add your cornstarch mixture

it should come to a thick paste stir stir stir can turn down heat

 

.. add in pears and more butter and a tad more sugar

Stir and pour over sliced peaches in pie plates in unbaked shells

roll remaining pastry into 11 inch diameter and cut into 6 strips of equal length preheat oven to 425 Place strips parallel across pie twist then fasten ends to piecrust or make your own design in your pie crust.. I made one with a flower

trim off edges pinch to form a high edge then make your decorative edge.. brush strips with milk and sprinkle with sugar and cinnamon mixture..

then  bake 40- 50 minutes till crust is golden

Don’t let over bake

your designs will start to show through

take out of oven and let sit a few minutes before cutting..

 

serve  warm with vanilla ice cream  and canned cold pears with pear syrup drizzled over ice cream
