Hey everyone! Spaghetti is a huge hit at my house…my hubby and my kids LOVE it! So i am always looking for ways to “better” it…and also to add in veggies the kids are unaware of! I made this spaghetti dish last night and hubby and the boys devoured it! Ok as always I dont have an exact recipe but here is the idea of it: I started out with a lil dab of butter in my skillet and then i diced onions and green peppers and threw them in…then I added chopped mushrooms, the some quartered artichoke hearts chopped then 2 tomatos cut into bite size chunks…everyone into the skillet to mingle and get all yummy….with some salt and pepper. Then I added a can of crushed tomato mixed it all together and let it simmer for a few mins (you could stop here and use this as a chunky sauce for your pasta) I then added a Large jar of spaghetti sauce (choose your favorite..mine is Ragu tomato onion and basil) let this all simmer and get good and yummy while you prepare your pasta…(i used thin spaghetti) and also this is a good time to have your garlic bread or toast baking away in the oven! So once everything is ready time to plate and enjoy….i topped our spaghetti dish with pieces of grilled chicken breast…so yummy! You could also add ground beef to the sauce mixture or serve with meatballs. this spaghetti dish was you tasty I never heard one complaint from my hubby and my boys about all the yummy “hidden” veggies..just alot of saucy smiles!
