okay so catfish is great but a  lot of people actually don’t like it cause they don’t know how to properly filet it.. no matter how good a cook you are if you leave what they call the “mud streak” in your catfish, the quality of your catfish goes down drastically..  it leaves a very very strong fishy taste in the fish. The mud streak is the dark streaks left after you fillet the fish..


Start with some fresh catfish.. any size,,, doesn’t matter

Now get you a very sharp thin filet knife.. or a serrated sharp electric set.. doesn’t matter.. we are using the electric set today to get it done fast..

lay your fish on a board

now go straight across.. it should butterfly it perfectly, stopping at the tail so they stay attached

you don’t want any of this.. get rid of that.. lol

take the blade through now close as you can to the skin to get all the white meat..

same with the other side..

put the meat in a bowl with cold water and salt to draw out the blood.. put it in the fridge and make sure you cut out the dark spots “mud streaks” if you see any before frying up.. or freezing for later.
