I belong to a WV group on Facebook and found this post discussion very interesting… so here is the discussion..
My mom use to make what was called leather britches. You put green beans on a string hang them out in the sun to dry. Store them in a brown bag. ( we called it a poke). Until you were ready to cook them. Of course you added bacon grease They were so good.

  • Theresa M. Shepherd I think stringing them up to dry, is another way of preserving them for the winter months.

  • Bob Canada Sr Gil Collins, once in a while I’ll find yellow tomatoes at my favorite produce stand (Vince’s produce) here in Glen Burnie, Md. during the summer. I buy them when I can find them due to their low acid content!

  • Melissa Toler-Cain I used to help my grandmother/Ma string them and they were delicious. I tried to do it yrs later with my own kids and they molded on the string. I was pretty disappointed and never attempted it again

  • Betty Young I have never done that but I am going to this summer. I order my corn and beans from a local farm have to order in april
  • Ernest Hays My Dad discovered he could put the pole beans on a sheet hung between the rafters in the attic. Almost instant leather britches. Then bag them.
