SERENA’S BEER BRAISED ROASTED CAJUN PORK LOIN

Today I had two small pork loin that I got on sale at Krogers that I decided to use for dinner..


I made a very easy and delicious Beer Braised Roasted Pork Loin, don’t worry about the alcohol as it will evaporate with the heat

Now I could have browned my Pork loin first on the stove then put into my pot but I was running out of time so I didn’t and it still turned out amazing, you just don’t get as beautiful color to your meat.. but that is ok

Ok so put your pork loin in either a heavy casserole dish, small roasting pan or in my case today I am using my heavy glazed Cast Iron Dutch Oven.. it holds heat really well .now add whole baby carrots, quarter up an onion and two large potatoes that are peeled salt and pepper very well and add cajun seasoning, you could add celery and garlic if desire but I chose not to today..

Now take one small can of beer and pour into the pot

put in 350 degree oven UNCOVERED and let go for 1 hour

Take out pork and  brush pork with A1 sauce lightly,

then  put lid on and back in oven for 35 minutes or till pork registers done on meat thermometer..


take out and let rest with lid off for 15 minutes before slicing so pork will retain some of it’s juices.. now I put my pork and most of my veggies on platter, then pour 1/2 cup broth over top.. can serve like this or can use the rest of beer and veggies to make a gravy by simply mixing with emulsifier or in blender.. to make gravy a tad darker and add flavor add a splash of A1 sauce.

pour gravy over top or set to side
