My Homemade Country Apple Pie is one of those recipes I just do not measure in.. I just make it as I go along..  I go by texture and taste, I make my mixture and it is usually enough for two apple pies.. sometimes more if I am using frozen apples I tend to make a bigger batch.


First Slice your apples. Pour 4 tbsp Lemon Juice over the apples and toss.. Then take your apples and put on stove in pot with a tab of butter and a tiny amt of water (if using frozen apples do NOT use water but be sure and add a tbsp lemon juice for tartness) start to cook to soften..

add 1/3 cup applesauce chunky is preferable.. then add sugar and bring to boil.

.. now add cinnamon. Taste  it, should taste good.

Then take off heat and add brown sugar and 1-2 tbsp flour.

your mixture should look a lot like this.. thick and yummy

Put in pie shell and dot all over with butter

take your chilled pie dough out of the fridge (for my recipe for pie dough click this link http://cookingwithserena.com/?p=3744 )

Roll out on a floured board and cut your lattice strips with a pastry wheel

start placing the strips on top of your pie in whatever pattern you want.. usually if I am in a hurry I don’t really worry too much about how it is going to look LOL cause we are going to be gobbleing it up right away…

make sure your oven is preheated to 400 degrees

take one egg and put in bowl sprinkle some sugar and cinn over it and a bit of milk

beat with fork

take pastry brush and brush egg yolk over top of pie crust

shake a mixture of cinn and sugar over top

 

bake. at 400 degrees  till golden..
