MORAVIAN SUGAR CAKE
(fixed this tonight and it’s delish)
2 teas dry yeast or 1 pkg.
1/4 c. warm water
1/2 c. unseasoned mashed potatoes
1/2 c. sugar
1/4 teas nutmeg
6 Tablespoons stick butter
1/2 tsp. salt
1/2 c. water that potatoes were cooked in
1 egg, well beaten
3 to 3 1/2 c. all-purpose flour
Topping
1/2 c. melted butter
Brown sugar (I used 1 1/2 cups)
Cinnamon (a lot)

Dissolve yeast in 1/4 cup warm water. Mix 1/2 cup mashed potatoes, sugar, 6 Tbls stick butter, 1/4 teas nutmeg, and 1/2 teaspoon salt. When lukewarm, add 1/2 cup potato water and yeast mixture. Set first mixture aside and let rise in warm place until spongy (foamy). Beat in 1 well-beaten egg and flour to make a soft dough. (dough is vey sticky) cover and let rise until double in bulk. Punch down. Spread dough evenly into greased 9x13x2 inch pan. Let rest for 30 minutes. Cover with generous amounts of cinnamon and the brown sugar. USE FINGERS AND POKE HOLES ALL OVER DOUGH.. Then pour the cooled, melted butter over all. (about 1/2 cup). Let rise till about double.. Bake at 375 degrees for 20 to 30 minutes.

  • Crystall Ash Cunningham yep.. mashed potatoes.. I cooked a med sz chopped potato in a bowl with water in microwave, drained, mashed up with fork and saved the water.

    this surprised me at how good it is.. tastes like a buttery cinnamon roll without all the trouble..
