Tonight was Bunco night. I had some leftover salmon I needed to use up, so combined several recipes I found….

I made up some basic salmon croquettes (salmon, mayo, onion, garlic, egg, parmesan); rolled into appetizer size balls, dip in egg, then breadcrumbs, fridge for 30 minutes, then fry…. served with some tarter sauce. Very good… in my book “a keeper”!
