COCONUT COCOA CAKE  with  CHOCOLATE COCONUT CREAM ICING

 

I took a regular old time choc cake recipe called Dream Devils Food Cake and sorta started out with that as my base and built my own creation out of it.. this was what I got.. mom and dad really enjoyed it.


 

2 cups all purpose flour

1 1/2 cups sugar (plus some for sprinkling on top later)

1/2 cup cup unsweetened cocoa

1 tsp baking soda

1/2 tsp salt

1/4 tsp baking powder

1 tsp vanilla

1/2 cup shortening

1 1/4 cup butter milk or sour milk ( milk with lemon juice added let set 2 minutes)

2 eggs

1 cup coconut shredded

preheat oven 350

grease 13×9 cake pan.

in mixer bowl combine all dry ingredients and then add in vanilla, shortening mix well. Add in milk and eggs and coconut.

Blend low speed then pour into pan.

Take GRANULATED SUGAR and sprinkle generously over top then with knife cut in across then opposite direction

 

Put into oven and bake till springs back to touch

take out and sprinkle with coconut then put in oven on broil JUST TILL coconut is lightly toasted…

Take out and make your icing and spread over WHILE WARM….

CHOCOLATE COCONUT CREAM ICING

made it up so didn’t measure but here is what I did..

maybe about 3-4 cups of powdered sugar

add about 4 -5 tbsp cocoa

mix then add in a cup to a half a cup of miniature marshmallows

pour 1 stick of MELTED butter over top of this and put on mixer … mix till creamy and add some milk

if too runny add MORE powdered sugar.. if too thick add a little milk… Lastly add 1/2 tsp coconut extract…. spread over warm cake.. let sit if you can.. hahah.. cause after it sits and the Top hardens  sorta like a fudge candy it is sooo much better ….. but we usually have to have  a slice while warm too.. but it really is better after sitting a while…

serve with ice cream or milk.. very very rich.
