Old Time Oatmeal Bread

1 1/2 cups rolled oats

2 cups boiling water

2 tsp salt

2 tsp butter

1 pkg dry yeast  (2 Tbsp)

1/4 cup warm water

6 – 8 cups all purpose flour

6 tbsp light brown sugar

1 tsp grated orange rind (optional)

1/2 tsp ground cinnamon

 

Put the oats in a saucepan and pour the boiling water over them. Stir in the salt and butter. Let cool.

 

dissolve the yeast in warm water

Add 3 cups flour to the yeast then the brown sugar orange rind and cinnamon

 

Stir in the oats and mix well. Add more flour. 1 cup at  a time until the mixture forms a dough

Turn out and knead until smooth and elastic about 10 minutes. Turn the ball into a greased bowl. Cover and let rise until doubled in bulk  (about 1 hour)

Punch down. Knead again for a minute then cut into halves.

Put each portion into the greased loaf pan, cover and let rise again until the dough fills the pans and is rounded on top. Bake in a preheated 400 degree oven for about 40 minutes or until the loaves test done.
