Ok friends, here is a great cookie recipe for Fall that I’ll share.
Pumpkin Cookies:
2 1/4 Cups Sugar,
3/4 Cup Butter,
2 eggs (well beaten),
1 large can pumpkin,
1 1/2 tsp. soda,
4 Cups flour, sifted;
2 Tablespoons baking powder;
1 Cup chopped nuts;
1/2 tsp. ginger;
1/2 tsp. cinnamon;
1 tsp. salt;
2 tsp. vanilla;
1/2 tsp. allspice;
1/4 tsp. cloves;
2 cups raisins.
Cream together sugar and butter.
Mix in rest of ingredients.
Drop on ungreased pan with teaspoon.
Sprinkle with a sugar and cinnamon nixture. Bake at 375 for 8-10 mintues.
Yields: 9 doz. cookies. These are a cake like cookie. Enjoy!
