PORK CHOPS WITH FRIED APPLES & RED SKIN POTATOES

So this is a very simple southern dish … but don’t let simple fool ya.. DELICIOUS!!!

This dish can be served for dinner or for breakfast with fried eggs. We chose to have it for dinner today.

  • First you want to start on your potatoes as they take longer to get done.

Take your red skin potatoes and scrub well.. keeping skin on you slice into medium size chunks.. careful to try to keep them all around the same size so they will cook evenly.

I took an apple or two.. and cored and sliced into smaller chunks … keeping skin on as well

Put into a mixing bowl and add a Tbsp oil, lightly salt and pepper, add a touch of basil and the chopped apple.

Mix well with hands. Place on a greased cookie sheet and put in oven at 400 degrees for 35 minutes

use spatula to loosen and turn potatoes over after the 35 minutes

then put oven on BROIL till tops are browned.. not burned. take out

and put over top our Pork CHops and Fried Apples. Serve

 

  • 2 part of recipe- while your potatoes are in the oven baking you will now start on your chops..

I took my pork tenderloin cuts and lightly tenderized them with my jaccard tenderizer tool

I peeled my 4 green apples and sliced them putting them in a bowl to the side so they would be ready to go when I needed them.

then I used two iron skillets to get the job done faster.. heat your skillets, and use a little oil.

Put your chops in and let them cook on medium high at first to get a nice crust on bottom then turn down heat  if your chops stick to pan turn down heat and leave them alone when they finish cooking on that side they will release easily from the pan… don’t panic.

Now turn the chops over and turn up the heat slightly again to get the other side nice and crusted.

Take them out and let them rest on your cutting board or a plate.

  • NOW for the third part of the recipe/ take your sliced apples and dump in one of the iron skillets, you are using the fat from the pork chop to brown the apples in and 1 tbsp water

my apples were not the best they needed more flavor so I added a Tbsp Orange Juice to bump up the flavor and a tbsp or two of sugar. Stir with wooden spoon and let the apples cook.

  • When apples are done take apples and put in serving dish.. line pork chops in a row over top of apples

  • Take potatoes and surround pork chops on platter

Serve and Enjoy!!!
