Grandma Dorsey’s Canned Sweet Potatoes

very very easy but time consuming recipe.. especially if you have a lot of sweet potatoes to do..


you can just put them in a skillet, add a tab of butter, some white sugar and brown sugar if you want and boil them down and you got some gooood stuff!!! Can do them in oven too in casserole dish like you do candied yams.. all kinds of yummy ways to eat them

here  is some  sweet potatoes  my wonderful neighbors gave me, they are huge and in beautiful shape

Many folks will tell you they find boiling theirs easier and just slip out the potato from the skins..

but I don’t.. I always found peeling mine easier.. I just use a strong comcortable hand potato peeler and go to town..


  • Make a simple Syrup  out of sugar  and water- at about a medium or light  syrup

Medium Syurp-

3 cups sugar per one quart of water

cut up your sweet potatoes

pack cut peeled potatoes  into hot jars

pour over medium or light syrup leaving 1 inch headspace

wipe clean the rims and sides and add your lids and bands  put into your pressure canner that has the water filled to the bottom notch in your canner

adjust pressure canner lid and wait till steady steam comes out and pressure has begun..  put on weight,  bring the canner to exactly TEN pounds of pressure BEFORE you start your timer..

Pressure Can an hour and 5 minutes at ten pounds of pressure for pints and 1 hour 30 minutes for quarts

When done turn of  heat and let pressure come down naturally.. once pressure has came down take  off weight and open lid take out and put on wooden block

continue on till you get all of them canned

I got lots more to go..  about 5 more hours and I will be done.. plus I got to bake a cake for the church bake sale tomorrow and get up for a bus job in clear creak at four am tomorrow.. shew wee.. maybe I should have not started this tonight =/

Finally DONE!!! I got 4 total canning out of them.. 28 quarts
