Microwave Scallop Potatoes

6 cups sliced potatoes
1 chopped onion (I just use a medium or small onion)
8 Tablespoons flour (3/4 cup)
½ teaspoon pepper
2 and ½ teaspoons salt
4 Tablespoons butter

Directions:

Cover with water and partially cook in the microwave, then drain. Place potatoes and onions in a buttered baking dish.
Melt butter in pan and then add flour mixed with salt and pepper. Gradually add milk and beat with a wire whisk to keep it smooth. Cook until sauce is medium thick, and then pour over potatoes and onions. Bake at 350F for 1 hour or until fork tender. Sprinkle with paprika for color.
You can add cheddar cheese into the cream sauce before pouring over potatoes for cheesy scalloped potatoes
