Just tried a Roasted Corn Salad similar to one I found, it was very cool and very tasty!
Recipe is:
—5 ears of corn roasted and cut off the cob, I didn’t scrap the cob, tried to keep whole kernels
—4 ripe tomatoes, diced
—1/4 sweet onion, diced
—1 can black beans, drained & rinsed in cold water
—1/2 green pepper, diced
—1/2 red pepper, diced
—4 small cucumbers, diced
—1 tablespoon Cilantro (I actually think fresh would be great, but I didn’t have it)
—2 Tablespoons apple cider vinegar
—4 Tablespoons Olive Oil
—salt, pepper, & garlic salt to taste
Mix all well, serve & enjoy!
